Tostadas De Tinga
This is a modified healthier version of one of my FAVORITE recipes that my mom & aunt makes. Tinga is always a crowd-pleaser and it’s super easy to make in large batches making it a perfect dinner party meal. Enjoy!๐คค
Ingredients
- 14 Oz. Boneless Skinless Raw Chicken Breast. (10-11oz Cooked)
- 8 Oz. Chorizo Sausage, casing removed (raw)
- 1 Large White Onion, ยพ of it sliced into half-moon pieces, and the other ยผ just left intact
- 2 Garlic Cloves
- 4 Medium Tomatoes, Diced
- 2 Cups of Iceberg Lettuce Shredded
- 12 Corn Tostadas (we like the Charras brand) – If you can’t find them, just buy corn tortillas. Microwave each one for about 30-40 seconds being careful that they don’t burn. They will harden!
- 6 Tbsp. of Sour Cream or, if you have a Mexican specialty store near you-you can use Crema – Plain Greek yogurt is a great healthy alternative too
- 6 Tbsp. of Feta, Crumbled, or if you have a Mexican specialty store near you-you can use Queso Fresco
- 1+ Whole Chipotle Pepper, Minced* Optional – Or you can use chipotle powder as well – about 1 Tbsp. or to taste
Instructions
Place a pot full of water over high heat and bring to a boil. Add in the chicken breast and the ยผ piece of white onion and the garlic cloves. Add salt and pepper to taste. Cook for about 10-15 minutes or until chicken is cooked through and there is no pink left in the center. While the chicken is cooking, dice the tomatoes, slice the onion, shred the lettuce, and crumble the cheese. Once the chicken is cooked, drain the water. Let it cool, and then shred the chicken using two forks and then cover and set aside. Next, in a large non-stick frying pan, heat over medium heat and add in the chorizo. Stir constantly and fry until browned for a few minutes. Then add in the shredded chicken, tomatoes, onion and season with salt and pepper. Mix well. Cook for about another 10-15 minutes until the onions are soft and everything is mixed well. At this point, you can also add in the chipotle pepper if you want to spice things up a bit. To serve, spread 1 tablespoon of sour cream on the tostada, then top equally with meat mixture and top with lettuce and feta cheese.
Enjoy 2 Tostadas with 1/6th of the meat mixture on top, + Sour Cream + Feta + Lettuce
