Buffalo Turkey Meatballs
Ingredients
- 1 Pound of Extra Lean Ground Turkey
- 1/2 Cup Egg Whites
- 1/3 Cup Blue Cheese, Crumbled
- 3 Green Onions, Sliced
- 1/3 Cup Buffalo Sauce
- 1 Tbsp. Extra Virgin Olive Oil
- 2 Cups Cooked Quinoa (about 2/3 Cup Dry)
- 4 Cups Roasted Cauliflower
- 1 Tbsp. Extra Virgin Olive Oil
- Optional Spices: Thyme, Garlic
Powder, Salt, and Pepper
Instructions
Preheat Oven to 400 F and line a baking sheet with parchment paper. Next, Cook your quinoa according to package instructions, about 15 minutes. Then, using a large mixing bowl, combine turkey, egg whites, blue cheese, green onions and about 3/4 of the buffalo sauce. Form into 12-16 small meatballs. The mixture will be quite wet. (If it’s TOO wet, you can add in some breadcrumbs if needed).
Place meatballs onto your baking sheet and bake for about 12-15 minutes. Mix your remaining buffalo sauce with the oil. When the meatballs are done, remove from the oven (drain any extra liquid from the pan) and top each meatball with sauce mixture evenly. Bake for about 5 minutes more. Remove and set aside on a plate and cover to keep warm.
Lastly, toss your cauliflower in a bowl with oil and spices using the same pan you made your meatballs with and roast your cauliflower for 20 minutes.
Portion Size
Portion into 4 equal portions with each serving having 3-4 meatballs (depending on the size of the meatballs you should have between 12 or 16 total)
