Chocolate Zucchini Sweet Potato Muffins


  • 1 1/4 Cup Whole Wheat Flour
  • 1/3 Cup Cocoa Powder
  • 1 Tsp. Baking Soda
  • 1/4 Tsp. Salt
  • 1 Tsp. Cinnamon
  • 1 Tbsp. Butter, Melted (you can also use canola oil or coconut oil)
  • 1/3 Cup  No sugar added Syrup, or Maple Syrup  (honey can be used as well)
  • 1 Tsp. Vanilla
  • 1 Egg
  • 1 Cup Zucchini, Grated – compressed of as much moisture as possible
  • 3/4 Cup Mashed Sweet Potato
  • 1/2 Milk, or another milk substitute
  • 1/3 Cup Chocolate Chips


To prepare your Zucchini Sweet Potato Muffins, you must first bake it in the oven at 350F for about 45 minutes. Until you can easily poke it with a knife. Doing this step the night before you decide to make them will speed up the baking process the next day. Once the potato is cooked and cooled, remove the flesh from the skin and mash with a fork or potato masher. Refrigerate until ready to use.

Preheat your oven to 350F. Line a silicone muffin tin with parchment liners and spray each liner with cooking oil. Using a cheesecloth or paper towel squeeze out as much moisture as you can from the zucchini. Then, in a large mixing bowl whisk together your dry ingredients. Then in another bowl, mix together your wet ingredients. You can whisk by hand or use an electric mixer. Add in your sweet potato and zucchini and mix well. Combine your dry and wet ingredients together and fold in your chocolate chips. Use a spoon to evenly spoon the mixture into your muffin tin and then bake for about 20-25 minutes, until you can poke with a toothpick clean. Make sure you don’t just poke through a chocolate chip however as it will make you think they’re not ready yet since the chocolate will be melty. Let cool for about 10 minutes and then wrap each individually and store in the refrigerator.
